60 Day Keto Diet: Week 1

Sunday kicks of Day 1 of the 60 DAY Keto Diet and below is a list of quick and tasty looking meals that I have scoured the internet for and decided to make during Week 1. The list isn’t in any specific order but I will be trying a different meal each day of the week (Sun-Sat). I have also hyper-linked the websites I found them on, because they aren’t my original ideas. Also, I will make note of anytime I stray from the given recipe.

Below that, are snacks and fruits that I will be eating throughout the diet (not just week 1). I almost had a heart attack when I read apples had a large carbohydrate count, but oh well! I also have a rough exercise plan and weekly carb intake–I have decided to ween off the carbs slowly, as to not die of withdrawal–summary below.

On Sunday, I will record my weight and keep track of my weight loss every Sunday after throughout the 60 Days.

Week 1: July 22nd – July 29th





  • Water (can add lemon & stevia)
  • Black Coffee (or w/ light milk)
  • Black, Green, and Herbal Tea
  • Drinks sweetened with Stevia
  • Raspberry Lime Rickey (contains alcohol)


  • Guacamole w/ Flaxseed Crackers
  • Peanut Butter w/ Celery Sticks
  • Unsalted Mixed Nuts (within moderation)
  • Seeds (sunflower, pumpkin, chia, flax)
  • Dark Chocolate
  • String Cheese
  • Cocoa Nibs
  • Hummus & Veggies
  • Beef Jerky


  • Starfruit
  • Blackberry
  • Raspberry
  • Strawberry
  • Honeydew Melon

Week 1: Every other day,

Week 2: Every 2 days

Week 3: 1/week

A Self Guide to the 60-Day Ketogenic Diet

I’m not usually one for the diets and the fasts, but my mother roped our whole family (excluding the younger ones) into this one, so might as well do it right, huh? If you don’t know what the Ketogenic Diet is, below is a brief summary.

The Ketogenic (Keto, for short) Diet is a low-carb, high-fat diet in which the body produces ketones for energy instead of of using carbohydrates. The end goal of the diet is to force your body into ketosis, a state in which your body produces ketones. – What is the Ketogenic Diet?

Now, this may sound pretty simple, right? Well, I thought the same thing until I read up on what a “low-carb” diet actually entailed. Here’s a brief list of what you can and cannot eat. (Keep in mind there’s a lot more than what’s a the surface!)

Do Not Eat: Grains (wheat, corn, rice, cereal, etc.); Sugar (honey, agave, maple syrup, etc.); Fruit (apples, bananas, oranges, etc.); Tubers (potato, yams, etc.)

Do Eat: Meats (fish, beef, lamb, poultry, eggs, etc.); Leafy Greens (spinach, kale, etc.); Above ground vegetables (broccoli, cauliflower, etc.); High Fat Dairy (hard cheeses, high fat cream, butter, etc.); High Fat Nuts and seeds (macadamias, walnuts, sunflower seeds, etc.); Avocado and berries (raspberries, blackberries, and other low glycemic impact berries); Sweeteners (stevia, erythritol, monk fruit, and other low-carb sweeteners); Other fats (coconut oil, high-fat salad dressing, saturated fats, etc.) – What is the Ketogenic Diet?

Now, many websites say count your micro/macro-nutrients , but I’m not very good at keeping track of things like that so I’m just going to play it by ear!
